Departed
The long Indian summer prolonged the season of many summer vegetables. But the weather has turned mostly to fall temperatures and tomatoes are no longer available. You know that you are in the grips of fall when tomatoes are gone.
However, greens thrive in fall weather and root vegetables are freshly dug, so take delights in the singular charms of fall produce. Learn how to cook with cardoons, stir-fry the gai-lan but leave some for the rest of us, and get to know the nutty green deliciousness of minutina. If you have a yen for Korean flavors, make a simple banchan of blanched edible chrysanthemum greens (water squeezed out, roughly chopped, and lightly dressed with toasted sesame seed oil, a scant amount of soy sauce, and toasted sesame seeds), make some rice, and fry an egg or two in toasted sesame seed oil until barely cooked, adding a little salt at the finish. Mix it all up in a bowl and call it your improvised version of vegetarian bib bim bap. If you’re feeling daring, add some kimchi to the mix.
