Winter is coming.
On Monday.
If you planned on making tomato sauce to put up or freeze; pickling peppers; cooking big batches of baba ganoush from local organic eggplants, calabacitas with summer squash and corn, or salsa with jalapenos and cherry tomatoes — well, you only have a few days left before the frost ends the growing season for many plants.
We have been madly harvesting prior to the frost, and not just things like summer squash and plum tomatoes. Winter squash stores splendidly as long as it is kept cool, but hard frosts destroy them. So we are harvesting butternuts, pumpkins, acorns and other varieties before the frost. Meanwhile, root vegetables like beets, potatoes and carrots will survive, in the ground, after the cold air settles. But the sweet potato greens? They are toast.
We hope to see you at the Market tomorrow, and in the restaurants all weekend and next week. Enjoy the balmy weather, and the bounties from Boulder County fields, while you can. Next week those fields might be blanketed in snow.
