The Black Cat Farm booth at the Boulder Farmers’ Market will include the following produce on April 23, 2016:
- Arugula
- Beets
- Carrots
- Cilantro
- Frisee
- Greens mix
- Kale
- Mache
- Mustard flowers
- Parsley
- Parsnips
- Rapini
- Scallions
- Sorrel
- Spinach
- Turnips, magenta
Sheep pelts and pig leather will also be available.
Quick rapini dish
You can use rapini, or any other type of hearty green, with pasta for a quick meal.
1. Wash, dry, and roughly chop the rapini.
2. Bring well-salted water to a roiling boil. Add pasta to the water.
3. When the pasta is done, turn off the heat, move the pot to a different location, and drop in the chopped greens. Count to ten and then drain the pasta and greens.
4. Add your pasta sauce of choice and any extras that sound good (for instance, grated cheese and sauteed mushrooms) to the pasta and greens.

Asparagus
There will be asparagus at our restaurants this week but not at the market. We are still short-handed, waiting for our additional farmhands from Mexico, which is affecting our asparagus harvesting. Also, the yields are smaller than expected with the expected overall crop to be in the hundreds of pounds rather than in the tons.
We are hoping to bring asparagus to the market next week.
