Ginger Beef Sauté with String Beans Recipe

Any recipe that pleases a family of six and can be prepared quickly and easily is as good as gold. Eric recently put together a beef dish that has become an overnight Skokan family favorite.

He thinly sliced beef from Frank Silva’s Natural Homestead Beef (http://allnaturalhomesteadbeef.com), which is a vendor at the Boulder Farmers’ Market. Natural Homestead Beef also supplies beef to the Black Cat Farm Table Bistro and Bramble and Hare restaurant. Eric also included the Royal Burgundy bush beans that the Black Cat farm grows.

While Eric says that you can use any beef loin cut for this dish, he recommends sirloin roast. Also, you can use any variety or color of string bean.

Green beans are the unripe fruit of the plants on which they grow. All bean varieties are members of the legumes family. Over 130 varieties of green beans exist. As with corn and tomatoes, beans are a harbinger of summer.

Ingredients

Bacon grease, or sunflower or grapeseed oil
1 pound sirloin roast, thinly sliced
1 pound green beans, cut into 2-inch pieces
2 tablespoons fresh ginger, julienned into thin strips
2 teaspoons toasted sesame seed oil
1/2 lime, juiced
Salt

1. Add enough bacon grease to a sauté pan to lightly coat the pan when it is melted. Or, add oil instead.

2. Apply high heat to the pan. When the pan has become hot, add the beef to it. Frequently stir the beef until it is halfway done.

3. Combine the green beans and ginger with the beef in the pan. Continue frequently stirring the pan contents. When the beef has finished cooking and the green beans are tender, remove the pan from the heat. Add the toasted sesame seed oil and lime juice to the beef dish and combine. Season to taste with salt.

4. Gather up your family members and serve immediately.
