The Black Cat Farm booth at the Boulder Farmers’ Market will include the following produce on June 27, 2015:
- Arugula
- Baby beets
- Baby Swiss chard
- Baby turnips (magenta, white, and hinona kabu)
- Cilantro
- Kale
- Lettuce, Jericho, Oak Leaf, and Tom Thumb
- Lettuce mix
- Mustard green mix
- Radish greens with flowers
- Spring onions
- Sugar snap peas
Mulefoot pork cuts, dried Windsor heirloom lima beans, dried black garbanzo beans, and goose eggs will also be available.
Pork and lamb
We recently replenished our meat supply, processing 11 lambs and 16 pigs. The lamb will be going to our restaurants. However, we will have lots of pork available at the market, particularly pork chops. We have also made a big batch of bacon, smoked over plum branches and cured with celery seeds instead of pink curing salt. While it may not be available at tomorrow’s market, it will be available soon.
Our chef de cuisine at Black Cat Farm-Table-Bistro recently made a porcetta that he sliced thinly for charcuterie. Look for that deliciousness at the restaurant.
To pay tribute to our pork bounty and give you an idea for something you can do with Black Cat Farm pork, we will publish a recipe from Eric’s cookbook for a Chinese barbeque pork with melon dish this weekend.
Planting crops
Because of the spring rains, we were delayed planting not only the crops for the immediate future but also the successive plantings that keep us well-stocked over time. Thus, we have been speeding the last two weeks to fit into the window for planting succession crops for August with long hours and planting by cell phone lights at night. We narrowly made it with most crops but not all. In August, we plan to plant root crops for the fall, like carrots and beets.
