Hidden eggplant made an unexpected first appearance of the year last weekend. Bringing up the rear this weekend will be the year’s first cucumbers, bell peppers, and jalapenos.
Tip
For some vegetables, small and young ones have better flavor and texture. Not so with beets. Eric says that he prefers large, even giant, beets to baby and small beets. He recommends big beets for their sweet taste and velvety texture. Plus, they are easier to peel.
The Black Cat Farm is offering plenty of big beets at the market now, ready for roasted beet salad with goat cheese or feta, toasted nuts, and Black Cat Farm greens.
